Sweetie Pie









Yummy treats from tea with my boyfriend at Sweetie Pies. Find them at The Old Pro Cathedral Building, Middle Street, Galway. Their carrot cake cupcakes are insanely good, not to mention their gigantic cupcake cakes! If your after something sweet right now try out this seriously easy chocolate biscuit cake, it doesn't require baking so it's perfect for a quick easy treat.





How to make chocolate biscuit cake:

What you need; 1 packet of digestive biscuits, 1 packet of chocolate chip cookies, butter, maple syrup, milk chocolate, jellies for decoration.

Directions;
-In a large bowl, placed over a saucepan of hot water, melt 150 grams (5.29 ounces) of unsalted butter (measurements are often along side of packet so you know how much to cut) with 400g (14.1 ounces) of milk chocolate. I think the amount of chocolate you add is up to how rich you want your cake to be so go with your preference here. Add 2 tablespoons of maple syrup, this will make the cake rich and sticky, and stir in to the mix.
-Next add crushed up digestive biscuits to the mixture, I also add crushed up chocolate chip cookies to make the cake extra special. I add about 1 packet in total but it's up to you.
-You can add anything to the mix you like, mini marshmallows, raisins, nuts, dried fruit, strawberries, popping candy, whatever your heart desires!
-Greece your tin with butter and add in your mixture, wet a spoon with cold water and use this to compact and flat out your cake.
-Place in refrigerator for 4 hours.
-Decorate by melting more chocolate;dark, white or milk chocolate and cover your cake, sprinkle with chocolate chip cookie crumbs and jellies.
-Serve with icecream and enjoy!
